Vineyard: Drawing from four vineyards, the Cactus White brings forth the nuances from each – crisp aromatics over a warm climate ripe berry. Hot days and cool nights allow for full development of the fruit, imparting a good sugar/acid balance.

Winemaking: A blend of 40% Viognier, 25% Chardonnay, 20% Gewurztraminer and 15% Pinot Gris. Grapes are hand harvested and hand sorted followed by a whole berry gravity “crush,” whereby free run juice had minimal skin contact. Fermentation temperature is maintained at 15 degrees to optimize flavours. Upon completion of fermentation, the wine is racked where it cold stabilizes for two weeks and then gets filtered and bottled.
